Catherine's Perfect Christmas

She’s one of Ireland’s best-loved cooks. So how – and where – does Catherine Fulvio, whose latest book is Eat Like an Italian, want to spend Christmas?

Where will you spend Christmas day?

At my home, Ballyknocken House, Ashford.

Will you be cooking and what’s on the menu?
Yes, I will be cooking on the day – the children help me the day before as well. These are recipes from our Christmas Wrapped Up class:
Brie and Cranberry Crostini served with a glass of Prosecco
Beetroot cured Salmon
Cider glazed turkey with parsnip and apple stuffing rolls
Hasselback potatoes
Brusselsprouts with Cannelli beans and parmesan
Roasted Butternut Squash with rosemary
Christmas mince pie bombe with a toffee sauce
Panforte Di Siena, from my book Eat like an Italian

What are you hoping to find under the Christmas tree?
More Italian Lessons! And a very good 2013 – can only be positive!

What’s your favourite part of the day?
Firstly, being with the children in the morning after Santa has arrived. I always enjoy the family time. And then towards the end of the day when I can just sit back and enjoy an espresso with a little chocolate.
