Breakfast really is the most important meal of the day. I recommend that you eat something within an hour of getting up in the morning. No matter where I am or what I’m doing I always make sure to start my day with breakfast.

 

Breakfast Recipe


Porridge and Fruit

A winter warmer – porridge is a staple in my home. You can mix it up with different fruit for variety.

Serves 1


Ingredients

 

30 g oats
150 ml low-fat milk
1 tsp cinnamon
1⁄2 tsp nutmeg
1 tsp honey
Fruit Options
1 small banana
90 g strawberries
90 g raspberries
90 g blueberries
20 g raisins

Place the oats with the low-fat milk and cook for 90 seconds in the microwave or 3–5 minutes on the stove top.

Sprinkle with cinnamon and nutmeg.

Top with sliced fruit and honey.

Serve hot.

Simple Snack Recipe

 

Baked Berry Squares


These are a hit with everyone in my house! A great snack that you can store in a one-serving container for a quick snack on the go.

Makes 12.

 

Ingredients


235 g rolled oats
2 eggs
90 g blueberries
120 g apple compote
40 g brown sugar
240 ml skimmed milk
15 g milled flaxseed
1 1⁄2 tsp baking powder
1 1⁄2 tsp cinnamon
1 tsp vanilla extract
1⁄4 tsp salt


Directions

 

Preheat the oven to 175°C/350°F/gas 4. Mix the oats, eggs, blueberries, apple compote, brown sugar, skimmed milk, flaxseed, baking powder, cinnamon, vanilla extract and salt together in a large bowl. Then pour into a 33 × 23 × 5 cm baking tin. Bake in the oven until the liquid is absorbed and the oats are tender, about 25–30 minutes.


Cut into 12 equal-sized portions.
