Gill Books proud to publish Chapter One’s long-awaited cookbook

04-07-2013 13:00

Starting out in 1992 from the basement of the Irish Writer’s Museum in Parnell Square, Chapter One went on to establish itself as one of the best restaurants in Ireland, with numerous awards for both service and food, including a Michelin star awarded since 2007.

Renowned for championing the best of Irish artisan food produce, Chapter One has placed Ireland firmly on the international food map too, with its reputation extending beyond Irish shores. AA Gill, Colman Andrews and Barbara Fairchild are among the international food gurus who have visited and loved Chapter One and the restaurant achieved the ultimate accolade when Ross was asked to cook for Queen Elizabeth II’s banquet in 2011, the recipes from which are included in this book.

The restaurant’s philosophy echoes throughout the book with recipes featured on the menu over the past 21 years included, but it will also celebrate the artisan suppliers Ross buys from with stunning portraits by famed photographer Barry McCall. This makes the book more than just a cookbook – it’s a story of how far Irish food has come.

Ross says ‘Irish artisans appear in many areas of human endeavour so we don’t just consider the provenance of our food, we also seek out craftspeople who create works to hold our food, objects which celebrate our unique Irishness, objects which adorn some of our quieter spaces. From bog oak sculptures and hand-crafted baskets to the bespoke charcuterie trolley made from Irish walnut, we make an effort to ensure our entire restaurant celebrates the integrity of people who are masters of their craft’.

Publisher Nicki Howard says ‘Gill Books is delighted to publish Chapter One. Every fan of the restaurant knows the high standard and warm welcome they receive: it’s food meets art, but with Irish soul and I hope they will feel exactly the same when they open the cookbook. We have assembled a hugely talented creative team for this project and every decision on design, paper, binding and ink is as carefully considered as the ingredients Ross chooses for his dishes. We are delighted Ross has chosen Gill Books as his publishing home’.

The book hits the shops in late October and will be the must-have gift book for Ireland’s foodies this Christmas!
