Get into a salad frame of mind!

When I think salad I think colour, thus I think antioxidants. I always remind myself that those populations who eat the most fruit and vegetables in the world are those who live the longest. Salad is good for the body and the soul! Salad is quick. Salad is easy. Salad is nutritious. Now is the time to get into a salad frame of mind - tells us The Food Nanny, Anna Burns.

 

After a very brief taste of good weather the other day I instantly turned from thinking chicken curry to chicken Caesar. I love salads, by which I mean gourmet salads, not dry miserable leaves of lettuce topped with wilted shards of dry carrot!. Avoca make the kind of salads I adore; broccoli with hazelnuts being a firm favourite of mine. My own quick-fix gourmet salad comes in the form of thirty-second Caesar salad dressing atop cos, romaine or iceberg lettuce; shavings of parmesan and chicken breast, sliced, if for dinner. My dressing is no more than mayonnaise, lemon juice, Worcestershire sauce, salt, pepper and grated garlic; always in the store cupboard and always delicious!

 

I find a great dressing holds the essence of a great salad. Classic French dressing; made with olive oil, lemon juice, dijon mustard, salt and pepper; on top of mixed salad leaves to accompany a steak and baked potato is much more appealing on a Spring day than a boiled broccoli accompaniment. Beetroot with just such a dressing and a scattering of mint leaves makes me feel energised and alive just thinking about it. Another beautiful, colourful and well balanced salad is the mouth-watering combination of watermelon with feta. Again, it needs a simple French dressing. Accompanied by crusty fresh good-quality bread and I’m in heaven.
